Why do keyboard shortcuts feel so much like an afterthought in modern applications? In my experience, more often than not, the keyboard shortcut suddenly stops working, while clicking your way through the menus never fails. In older (like Paleolithic older) applications, it feels like it was the other way around; keyboard shortcuts always worked, while the graphic UI that they tacked on to the application was a bit flaky, and often differed between distributions. They probably weren't even called shortcuts in those days, just "commands".
An example of a newer application would be VsCode, where you have about 50% chance of the keyboard shortcut working, given there is one in the first place. Examples of older applications would be Emacs, where most commands aren't even available in the drop-down menus.
