The Sunchoke aka: Jeruselam Artichoke is a Perenial Sunflower that produces a tuber which tastes similar to a potato. Depending on water and nutrients they grow as tall as 12' with smaller sunflowers than you would get from a traditional sunflower but the abundance of blooms more than makes up for it. The tubers are as big as half a pound but generaly one flower has 1 big root and a multitude of smaller ones clustered around it. Prepare and cook the same as any other potato. Plant a large enough patch and you can have them year round, although they are best harvested fall through early spring.
