summary: A favoured cooking apple, holding its shape and texture well for pies, crumbles and crisps. In most areas where this variety is grown, it is encountered as a primarily green apple with some blushing. However, it does develop colour in storage and becomes remarkably sweeter.
identification: Large, round conic in shape, sometimes tending to be lumpy. Very lightly ribbed on the sides and at the crown. Colour can vary. Dull yellow or green skin, often with no additonal colouration, but just as often it is highly coloured with bright orange-red flushes where exposed to sun. Characteristically, it has large russet patches. The stem is short and thick, set in a deep, russeted cavity. The calyx is medium size and slightly open in a medium deep basin.
characteristics: Flesh is yellowish, coarse-grained and firm. Crisp, crunchy, juicy and sweet-sharp right off the tree. Fruity. Aromatic. Very good. High Vitamin C content. When left to mature in cold storage, it becomes intensely sweet, savory, spicy with a distinct hint of pear flavours, but loses its crispness, becoming almost too soft.
uses: Good baked as a dessert. Popular in salads. Often used in ciders for its acid content. This apple is the essential ingredient in the renowned Berliner apple pie.
origins: Found in 1856 as a bud mutation on Reinette de Montfort at the Ottlander Nursery in Boskoop (Netherlands). It somehow endured and has enjoyed a surge in popularity in recent years.
cultivation: Vigorous to moderately vigorous, upright spreading and hardy tree tending to droop somewhat, Bears fruit on spurs. Resistant to frost. Good for cooler climates. Tends to become biennial.

cold storage: Keeps up to five months. Flavours develop fully after about a month in storage. Tends to become mealy when stored too long. Also, the fruit is susceptible to core rot.
vulnerabilities: Slightly susceptible to scab. Canker- and scab-resistant. Highly resistant to fire blight.
harvest: Ready for harvest early in the fifth period, 145 to 165 days after petal drop.
